Akrivi Paraskevopoulou was born in 1955 and raised in Athens. During the junta's rise, her family decided to emigrate to Canada, settling initially in London, Ontario. She attended school there before moving to Toronto. Paraskevopoulou briefly returned to Greece, where she met her husband. She worked at the BMO, climbing the corporate ladder, and later volunteered as a teacher at the Greek School in Oshawa. Akrivi was organizing community events and became involved with Philoptochos, where she served as secretary. She played a crucial role in the amalgamation of the Greek community and the church in Oshawa.
